- On arrival at the winery, the fruit was chilled
overnight. The following morning the fruit was de-stemmed
directly into open pot fermenters. A four day cold soak (to fix
colour and gentle extraction) took place before wild yeast
fermentation commenced. Plunging and pump overs during
fermentation aided extraction. Post fermentation, maceration for 3-7 days before pressing, settling and racking into
barrel for maturation
Founded by film producer and director of Red Obsession, Warwick Ross, the Portsea Estate vineyard sits at the very tip of the Mornington Peninsula in south eastern Australia. Located on the century-old Tintagel property overlooking Bass Strait, Portsea Estate’s unique terroir derives from extensive limestone deposits and a top soil of calcareous sand and humus.
