- This was a really fun wine to make for us, using the field blend approach. Both blocks were hand-picked together on the same day, March 29, which was the last picked fruit of vintage for us, so fruit was juicy and ripe. Delivered to the winery where it was then gently de-stemmed and crushed into open top fermenters, we aimed for 25% whole berries. A cold soak took place for 5 days, then fermentation was for 6 days, with hand plunging taking place 2 times per day, then lightly pressed to tank where the free run juice and around 50% of the pressings were combined. At this time, we also drained off some juice to help make our 2018 Rose as well, making this wine a little more concentrated. Once the wine was dry, 50% was sent to 4-5 year old French oak puncheons, and 50% was kept in stainless. All for a total of 4 months only, the process aimed to retain vineyard and fruit freshness. A light screen filtration, then bottling; completing the process on September 14, 2018 and sealed under Stelvin screw cap.

"The fancy of freshness. Raspberry, spice, strawberry pie and anise notes fly attractively through the palate, charming as they go. It's a 55/45% blend; it saw no new oak (40% was kept in stainless); the flavours and scents burst merrily from the glass. It's a lovely wine. Serious quality, fun style.."
