- French word meaning ‘greyhound’, Lévrier are one of the oldest breed of dog appearing in ancient art and literature throughout history. Originally bred as hunting dogs, these majestic animals are constant companions in my life and have been associated with royalty, warriors and noblemen for centuries. ‘The Odyssey’, written by Homer in 800 BC, mentions the legend of Argos, a faithful greyhound waiting for his master Odysseus to return after 20 years fighting the Trojans, When he finally does return home, he disguises himself as a beggar and the only one to recognise him was his loyal greyhound Argos. Personally selected single vineyard fruit from dedicated Barossa and Eden Valley growers, matured for 24 months in specific new French oak barrels and bottle aged for a minimum of 12 months before release.

"Selectively harvested whole berry fermentation, 66% 7-10 days on skins, thence to French oak (30% new), 3% on skins for 2-3 months, thence to new French oak for 18-24 months. Overall 40% new oak after a best barrels selection, and it shows - it will need 5+ years in bottle to allow the fruit to gain primacy"
