- On arrival at the winery, the fruit was chilled overnight. The following morning the fruit was de-stemmed directly into open pot fermenters. A four day cold soak (to fix colour and gentle extraction) took place before wild yeast fermentation commenced. Plunging and pump overs during fermentation aided extraction. Post fermentation, maceration for 3-7 days before pressing, settling and racking into barrel for maturation
