- Wild yeasts initiate fermentation, contributing to the individual complexities of the
wine, creating richness and fine textures. The skins were plunged regularly to extract
colour, tannin and flavour. Once fermentation was complete, the wine was matured in
Tonnellerie Sylvain barriques. These unique barriques are coopered specifically from a
360 year old tree from the Troncais forest of France.
Yalumba Steeple Vineyard Shiraz is a true single vineyard wine that continually
showcases its Barossa provenance. The wine reflects the generosity and style of the 2015
vintage, with attractive perfumed aromas of anise and sweet blueberry. Packed with
raspberry, cranberry and violet flavours, this is a stylish and enticing wine, with silken
smooth texture.
Enjoy with slow cooked black Angus beef cheeks, smoked chestnut puree and roasted
cabbage or Cajun style tofu with caramelised root vegetables.
