This Pinot is an explosion of aromas. The nose is raspberry, sarsaparilla, sage, capsicum, cherry, hazelnut. Sometimes more, and sometimes less. The palate is a ride. A big lot of primary fruits, berries, cherries, other delicious red things. Then there is a move into the more serious side with a nutty, spicy element. Nice length with spice carrying through to the end This note is hard to write as this wine is a different journey of excitement every time I drink it! The wine was bottled unfined and unfiltered with the only addition being a small amount of sulphur prior to bottling.

Food Pairing - Pork, filet mignon, and game dishes. Stews, wild mushrooms, and root vegetables also make good pairings with Pinot Noir. A classic pairing is Beef Bourguignon. Or, try a fun pairing with char siu pork or crispy duck pancakes.
