Selectively harvested then cold soaked for up
to 3 days prior to 100% whole berry fermentation in open pot vessels. Gently hand plunged
during ferment for controlled flavour and
tannin extraction. Predominantly ferments
were inoculated with a Burgundian selection
of yeast strain, with some batches allowed to
ferment naturally. 9-10 months barrel maturation in 15% new French oak (60% puncheon
and 40% barriques) prior to bottling.
Tasting Notes:
An intensely fruited and perfumed aromatic profile combines dark cherry, raspberry, wild strawberry notes. A structurally generous and gratifying palate offers both clarity of fruit expression and drive.
