- Fermented in traditional hand plunged open vats and then matured in 4 year and older (2600L) French oak barrels. These French ‘Foudre’ casks serve to lift and freshen the fruit on the nose and palate rather than add any obvious characters of new wood. This wine is developed with a simple winemaking philosophy; choose the best fruit we can and gently encourage the savoury red fruit and soft tannins that the Hunter is famous for to shine through.
